Bananas Foster Bread Pudding

Classic Bread Pudding is filled with bananas, pecans, and rum! Creating a gorgeous Bananas Foster inspired Bread Pudding! Easy to make this recipe is a crowd pleaser, best served a la mode.

Ingredients

  • 5 1/2-6 cups stale bread ( I used a french baguette and a french loaf)
  • 5 large eggs, beaten
  • 1 1/2 cups granulated sugar
  • 1 cup heavy whipping cream
  • 1 cup whole milk
  • 1 tbsp vanilla extract
  • 1 1/2 tsp banana extract
  • 1 tsp cinnamon
  • 1tbsp rum ( I used Sailor Jerry's)
  • 2 large bananas, sliced
  • 1/4 cup unsalted butter, softened
  • 3/4 cup pecans, chopped
  • 1/2 cup light brown sugar
  • 1/4 cup heavy whipping cream
  • 1 stick butter (unsalted or salted)
  • 1/4 cup heavy whipping cream
  • 3/4 cup light brown sugar
  • 1 tsp banana liqueur
  • 1/4 cup rum (I use Sailor Jerry's)

Instructions

  1. Make sure your bread is stale. If not break it into bite size pieces place on a baking sheet and cook at 350F for 15 minutes or so. Leave your oven on and grease a 9X13 baking dish.
  2. In a large bowl combine eggs, granulated sugar, heavy whipping cream, and milk. Add in vanilla and banana extracts, cinnamon and rum.
  3. Pour bread chunks into the egg mixture and pour into greased pan. Let sit for 20 minutes. I placed a damp paper towel on top of the mixture while marinating to keep moisture in.
  4. Slice bananas thin and layer on top of bread mixture.
  5. In a small bowl combine butter, pecans and brown sugar. Sprinkle on top of bananas.
  6. Sprinkle 1/4 cup of heavy whipping cream evenly over the top of everything, then bake for 50-55 minutes.
  7. Once cooked let cool on a wire rack and right before serving begin the sauce. (Or make ahead and reheat for serving)
  8. In a medium saucepan heat butter, brown sugar and cream. Once fully combined add banana extract and rum.
  9. Drizzle on top of bread pudding and serve with ice cream!

Notes

* You could use banana liqueur in lieu of the banana extract *
